Peel potatoes and cut into 1/8" thick slices. Whisk together half-and-hafl cream, salt and pepper.

Shred cheese and combine in small bowl, reserving 1/2 cup Cheddar for the top. 

Shred cheese and combine in small bowl, reserving 1/2 cup Cheddar for the top. 

In greased 8x8-inch baking dish, layer 1/3 of the potato slices, 1/3 of the heavy cream, 1/3 of the shredded cheese mixture.

Repeat for two more layers.

Top with 1/2 cup of reserved Cheddar.

Bake in 350°F oven for 1 hr, 30 minutes. Let rest 10 minutes and enjoy!
