RICOTTA COOKIES WITH CHOCOLATE CHIPS & ORANGE

Whisk together flour, baking powder and baking soda. Set aside.

Beat butter and sugar until light and fluffy, then add in the eggs, one at a time.

Add in ricotta, orange juice, orange zest and vanilla.

Add in dry ingredients in three addtions.   Do not overmix.

Stir in the chocolate chips. Drop dough onto baking sheets. Bake in 350°F oven for 13 minutes.

Combine powdered sugar, orange juice and orange zest. Dip cookies into icing.

Allow icing to set for 45 minutes. Enjoy!
